Rainbow Veggie Gratin

I’ve been calling this my Rockstar Side Dish for awhile now…. mostly because it’s so easy to make, looks gorgeous, is healthy and sort of makes you feel like a Rockstar bringing it to a dinner party. Win, win – right?


  • Assorted veggies, sliced (I used tomato, zucchini/courgette, bell pepper, purple onion, eggplant, and I think it was a yam… whatever the white one was!)
  • Drizzle Olive Oil
  • Salt & Pepper
  • Sprinkle of Parmesan Cheese



  • Preheat oven to 350F
  • Slice veggies with similar thickness
  • Layer into your lightly greased baking dish
  • Drizzle with olive oil and sprinkle with S&P, cheese
  • Bake for 35-40 minutes, or until all veggies are tender
